Job Description

The Head of Coffee at Toby’s Estate NYC is a senior leadership role responsible for shaping and executing the brand’s coffee program across all New York locations. This individual will drive coffee quality, innovation and training, while honoring our Australian roots and commitment to third wave coffee values—traceability, seasonality, and precision.

This is an exciting opportunity to build something from the ground up in a city known for its world-class coffee scene. You’ll be hands-on, both behind the bar and behind the scenes, developing our baristas, curating our offerings, and ensuring consistency, excellence, and integrity in every cup.

Primary Responsibilities

Lead and oversee all aspects of the NYC coffee program.
Uphold and evolve coffee quality standards across all Toby’s Estate NYC stores.
Implement and oversee coffee QC practices including tastings, calibration, and espresso tuning.
Support café openings and bar setup—layout, flow, equipment, and training.
Act as a brand ambassador within the specialty coffee community in NYC and beyond.
Provide regular performance feedback and coaching to baristas and coffee leads.
Collaborate with marketing, retail, and culinary teams on product development (e.g., signature drinks, RTD).
Monitor and report on coffee performance, waste, yield, and customer feedback.
Maintain and manage all espresso and brewing equipment in coordination with our equipment partners.
Requirements

Minimum 4–5 years in specialty coffee, with at least 2 years in a coffee leadership or training role.
Deep understanding of coffee principles: seasonality, traceability, quality control, and education.
Hands-on experience with espresso, filter brewing, alternative brew methods, and milk texturing.
Proven ability to design and lead engaging training sessions and tastings.
Familiarity with major espresso equipment (e.g. Slayer, Mahlkönig, etc.)
Strong palate and confident in cupping, calibrating, and assessing coffee quality.
Exceptional communication and leadership skills.
Organized, detail-oriented, and capable of managing multiple priorities across teams.
Legally authorized to work in the U.S.
Must be based in or willing to relocate to NYC.
Preferred Qualifications

Q-Grader or similar sensory certification (preferred, not required)
Experience launching or scaling a multi-location coffee brand
Knowledge of the NYC specialty coffee market
Previous work with or in roasting operations is a plus
Job Type: Full-time

Pay: $22.00 – $26.00 per hour

Expected hours: 36 – 40 per week
