Full-Time Barista & Wine Server
Job Description
Porcelain is a new, growing Austrian-inspired café serving Ridgewood, Queens with specialty coffee, reinvented Old World food, and curated wine & beer. We are seeking a strong barista to join our team. This is a career-building role: our roaster and lead barista will train the candidate to learn the end-to-end coffee process. The candidate will be trained by our professional sommelier to serve our wine & beer offerings and holistically understand wine above and beyond the menu.

This is a full-time role (minimum 30 hours per week). The candidate must be able to work both weekdays and weekends, five days a week. Compensation is competitive.
Beans and Equipment:
- Beans supplied by Redefine Coffee
- Royal Tea Company & Brew Tea Company tea (all tea loose-leaf)
- Custom-painted San Remo F18 3-group machine
- 3 Mazzar / Mahlkonig grinders
Coffee service responsibilities:
- Efficiently dials in grinds at the beginning of each shift, and during the shift as-needed
- Maintains defined extraction parameters during rush periods
- Proficiency in modern milk-steaming method and latte art with dairy and non-dairy milk, executes quality latte art in every cup
- Maintains consistency and quality of output
- Greets all customers with fast, friendly, personalized service and develops a rapport with our customers by learning their names, favorite drinks and food items
- Verbally receives and calls back customer orders in a friendly manner
- Reports all customer complaints to FOH manager and owner
- Responds proactively to prevent customer service situations
- Accurately rings sales orders into register and counts back change to customers in a courteous and friendly manner
- Answers telephone in a courteous and friendly manner including, but not limited to, giving store greeting, directions to store location, and receiving and filling customer orders
- Answers customer questions regarding coffee blends, preparation, and product freshness
- Weighs, grinds and packs coffee per customers’ orders according to guidelines
- Sells and serves baked goods and miscellaneous food items to customers
- Maintains efficient, friendly service standards and demonstrates such standards when training other team members
- Executes side work duties, which include – but are not limited to – wrapping cutlery, stamping cups / sleeves, making tea bags from loose-leaf, cleaning and stocking the bathroom, sweeping the FOH area, and mopping the FOH area
- Reports potential safety hazards to the manager on duty
- Educates our customers on the details of our beans and coffee options
- Weighs, grinds and packs retail coffee offerings per customers’ orders according to guidelines
- Sells and serves baked goods and food items to customers, well-versed in the food menu and able to talk through any of the menu item ingredients in detail
- Continues to learn and educate themselves on whole bean knowledge, coffee blends, tea products, bakery items, coffee brewing, and blended products
- Participates in all sales promotions effectively and efficiently
- Safely handles all hot and cold drinks during drink preparation
- Restocks the fridge with milk and concentrate orders as needed, using the FIFO method to assure the oldest milk and concentrates are placed in front of the fridge for service
- Maintains all NY Department of Health Standards at all times (labels all non-factory packaged items in the fridge, keeps sanitizer bucket at sink ready with a rag, assures food specified to be labeled is indeed labeled correctly)
- Proactively monitors the inventory of cold brew, iced tea, chocolate syrup, and simple syrup to confirm when more is needed and creates batches as defined by recipes
- Assists FOH manager with inventory counting as-needed
Additional wine and beer service responsibilities:
- Properly stores all wines and beer as directed by procedure
- Maintains consistency with each wine and beer pour
- Pours wines and beers in appropriate glasses
- Cleans and polishes wine and beer glasses behind bar as-needed
- Responsibly managing intoxicated customers and alerting the FOH manager and owner immediately of any disturbances
Requirements, Qualifications & Physical Demands:
- 2-years experience in a specialty coffee barista role (required)
- Runs errands, when needed
- Works special events, as needed
- Maintains positive morale
- Must be able to work overtime, as needed
- Demonstrated ability to lead, communicate and train fellow team members
- Excellent verbal and written skills
- Well-organized and detail-oriented
- Register and cash handling experience
- Minimum high school diploma or equivalent
- Regularly required to stand, walk, talk and hear
- Frequently required to use hand to finger motions, handle or feel objects, and reach with hands and arms
- Regularly required to lift and/or move items up to 30 pounds
- Vision requirements: close vision, distance vision, and ability to adjust and focus
- Regularly required to handle food and hot beverages
- Lack of allergies to items stored in FOH (includes nuts) — or able to manage allergies with specific handling procedures that do not impede speed and / or quality of service
